We also stop by the Longue Vue House and Gardens as they prepare for “Freedom Ride," an opera about Civil Rights activists in the early 1960s. To satisfy our appetite we meet up with Mimi Assad, executive chef of Le Foret, where she brings together her family heritage, as well her work under chef Susan Zemanick, to present a cuisine that focuses on both French and seasonal elements.
