Chubby Carrier's contribution to That Sounds Good!: Creole Chicken cooked in tomato sauce

In contrast to last month's Creole Gumbo recipe and its epic complexity, here's a deceptively simple version of a Louisiana classic. It's Zydeco artist Chubby Carrier's contribution to That Sounds Good!, WWOZ's cookbook of recipes from our Louisiana musical family. The short list of ingredients produces a kind of country comfort food; in the version pictured, we used green onion sausage and added salt and cayenne to taste.

4 (8-ounce) cans tomato sauce
Green bell peppers, chopped
1 onion, chopped
3 pounds boneless chicken breasts, cut into small pieces
3 pounds smoked sausage, cut into small pieces
Hot cooked rice

Directions
Get a nice sized pot out. Fill it half-full with water and bring to a boil. Pour the tomato sauce in it. Add the vegetables. Let it cook for about 45 minutes. Add the chicken and let it cook for about 30 minutes. Add the sausage and let it cook for another 30 minutes. Don’t forget to cook some rice!

Put some rice on the plate, then the gravy on the rice, then the meat. There you have it…ready to eat.

Chubby Carrier, "The World's Premier Zydeco Showman", was born on July 1, 1967 in Churchpoint, Louisiana. Chubby is the third generation of zydeco artist in his family, with such famous relatives as Roy Carrier (father), Warren Carrier (grandfather).
